We must tackle our overdependence on animal agriculture to stave off the worst effects of climate change, yet meat reduction campaigns can often feel like an uphill battle. Enter behavioral nudges. The science is in: using subtle nudges, and particularly making plant-based food the default choice on menus, is a powerful way to shift diner behavior and slash institutional carbon and water footprints.
